Nyonya Sambal Paste

How to make Nyonya Sambal Paste!

Ingredients (A) :
10 shallots
6 cloves garlic
5 stalks lemongrass ( white part only)
2 stalks ginger flower (bunga kantan)
15 chilli padi
30 pieces daun kesum
100ml cooking oil

Ingredient (B)
5 tbsp cooking oil
5 tbsp tamarind paste / asam jawa paste ,mixed with 6 tbsp water and squeezed out the juice.
2 1/2 tbsp sugar
1 tsp toasted belacan powder
1tsp salt
3 tbsp lime juice


1. Blend all the ingredients (A) until fine .

2.Heat up 5 tbsp cooking oil , fry the blended ingredient (A) until fragrant.

3.Add in ingredients (B) ,stir well until it start boiling. Remove from heat.

4. Can be refridgerated up for 1 month
