Purple sweet potato Kuih Seri Muka
Ingredients:(A)
Glutinous rice Layer
300g glutinuos rice (washed and soaked overnight)
150ml thick coconut milk
50ml water
3/4 tsp salt
1 1/2 tbsp sugar
4 pandan leaves

Ingredients (B)
Purple Sweet potato Custard layer
150g smashed purple sweet potato
70ml water
200ml thick coconut milk
60g low protein flour
20g rice flour
20g corn flour
2 large eggs
110g sugar

Method:
Glutinous rice layer
1.Wash and Soak glutinuos rice for at least 4 hours or better over night . Drain.

2.Prepare a 8 inch square cake pan, transfer the rice into the pan.

3.Mix coconut milk,water ,salt and sugar . Pour it into cakepan to mix with glutinuos rice ,top with pandan leaves.

4.Steam with medium heat for 20 minutes, fluff up the rice and continue to steam for 10 minutes.

5.Remove the pandan leaves and flatten the steamed with a spoon. Compress the rice with heavy object.

Purple sweet potato custard layer
1.Steam and mashed the purple sweet potato .

2.in a big bowl ,combine water with sweet potato, add in coconut milk ,low protein flour, corn flour and rice flour,mix well and strain into a saucepot.

3.combine eggs and sugar,stir until sugar melted. Pour into saucepot to combine with (2). Place the saucepot over low heat stove. Stir Continuosly and cook till custart start to thicken.

4.Pour the purple custard into glutinuos rice layer, give it a little tap (to prevent air bubbles) and continue steam for 35 to 40 minutes with low medium heat.

5.Remove Kuih Seri Muka from the steamer and allow to completely cool before cut and serve. Enjoy it!
