Crunchy and crispy Pineapple tarts
Ingredients :
340g plain flour
1tsp baking powder
30g icing sugar
220g unsalted butter
1egg(lightly beaten)
50ml cold water
1/2 tsp vanilla essence
1/2 tsp salt
some Pineapple filling (recipe from last episode)

 

Soft and buttery pineapple tarts that melt in your mouth
Ingredients:
175g salted butter
20g icing sugar
230g low protein flour
2 egg yolk
30g milk powder
some pineapple filling (recipe from last episode)

 

Crunchy and crispy Pineapple tarts

Method:
1.Cut butter into small cubes. Keep back in fridge

2. Sift plain flour ,icing sugar and baking powder together.

3. Add in cold butter cubes. Using finger tips, rub butter cubes into flour till it becomes breadcrumbs-like. note: When rubbing in the butter cubes,make sure to use fingers tips instead of palms. The heat from palms will melt the butter,and you cant get the breadcrumbs like texture.

4.Add eggs,cold water ,vanilla essence and salt, mix well to form a smooth dough (dont knead). Set aside for about 30 minutes. Meanwhile ,roll pineapple filling into 9g ball each.

5.Roll out pastry to about 6mm thickness. Press out dough with a pineapple tart mould. Place on lined baking tray, add pineapple filling on top of the pastry and glaze with beaten egg.

6.Bake the tart in a preheat oven at 160'c for about 15 minutes+-.

1. By hand mixer or by hand ,beat the butter and icing sugar till light.

2.Add in egg yolks, beat until combined.

3.Sift in low protein flour and milk powder. Mix well everything to make a non sticky dough (dont knead). cover with cling paper and Refrigerate for about 30 minutes. . Meanwhile ,roll pineapple filling into 8g ball each.

4. Press out the dough using a pineapple rolled tart mould. add pineapple filling in it and roll . Place on a lined baking tray and glaze with beaten egg.

5. Bake the tarts in a preheat oven at 170'c for about 20-25 minutes.
